TASTING NOTE
Colour

Straw colored when still green. Thin, balanced and elegant bubble.

AROMA:

On the nose, we find aromas of citrus, pear and apple, and also pastry, the result of a careful aging in the cellar.

TASTE:

Smooth at mouth and entrance with a good acidity that gives a lot of freshness and persistence.

MATCHING
It pairs well with all courses of a meal, from the aperitif to dishes like scallop carpaccio, and even desserts such as fruit-based cakes or Tarta de Santiago
WHO CAN CONTRACT
Espelt Viticultors captures the essence of Empordà in every bottle, blending family tradition, respect for the environment, and a contemporary vision of winemaking. Their wines express the richness of the Mediterranean terroir with freshness, elegance, and authenticity.
Very soft pressing. Fermentation of flower must at low temperature. Tiraje in the month of February to make the second fermentation in bottle. Parenting with a minimum of 15 months.

We recommend serving it cold, between 6 and 8 ºC.

Cava and Champagne are elaborated with the same procedure, called traditional method or champenoise. The process definition gives the name to the final product, a sparkling wine produced with the classic method of fermentation in bottle and ageing in “cavas”. Recently is one of the more dynamic sectors in the world of wine, with a whole production that has exceed the 220 millions of bottles per year, reaching customers from all over the world.
