TASTING NOTE
Colour

Straw colored when still green. Thin, balanced and elegant bubble.

AROMA:

On the nose, we find aromas of citrus, pear and apple, and also pastry, the result of a careful aging in the cellar.

TASTE:

Smooth at mouth and entrance with a good acidity that gives a lot of freshness and persistence.

MATCHING
Great to accompany all dishes of a meal, an aperitif, like a carpaccio of scallops to the same desserts, could well be cakes based on fruit or a Santiago’s cake.
WHO CAN CONTRACT
Vineyards of the D.O Empordà. Loamy soil.

Very soft pressing. Fermentation of flower must at low temperature. Tiraje in the month of February to make the second fermentation in bottle. Parenting with a minimum of 15 months.

We recommend serving it cold, between 6 and 8 ºC.

Corto en nariz y con un punto de más de gasificación.

Cava and Champagne are elaborated with the same procedure, called traditional method or champenoise. The process definition gives the name to the final product, a sparkling wine produced with the classic method of fermentation in bottle and ageing in “cavas”.
