The vineyards in the area extend over flat or slightly undulating terrain. In general, they are neutral or slightly basic, loamy soils of medium fertility, with areas of unsurpassed quality for vine cultivation.
The following types are distinguished:
Vinagre Condado de Huelva, comes from the acetic fermentation of a Condado de Huelva P.D.O. certified wine, with a residual in alcohol from the wine used of no more than 0.5% vol.
Vinagre Viejo Condado de Huelva vinegar is aged in oak barrels or bocoyes, enriched with fortified and liqueur fortified wines of the Condado de Huelva P.D.O., with a residual alcohol from these wines of no more than 3% abv.
Vinagre Viejo Condado de Huelva Solera, is a Vinagre del Condado de Huelva" aged by the traditional method of "criaderas and soleras", for a period of time not less than six months.
Vinagre Viejo Condado de Huelva Reserva, is a "Vinagre del Condado de Huelva" aged by the traditional method of "criaderas and soleras" for a period of no less than two years.
Vinagre Viejo Condado de Huelva Añada, is a "Vinagre del Condado de Huelva" of static wood aging for a period of not less than three years.
