Colour
Clean, clear and bright. Cherry color with violet highlights. Medium / high layer intensity. Very nice to see.
AROMA:
Nose with a good presence of red fruit, where they are perfectly combined with the subtle hints of spices and the toasted and vanilla notes of their aging in barrels.
TASTE:
The palate is very well marked freshness, where they are in perfect balance with the density and volume of the wine itself. It has a soft character and can be drunk from the beginning, where it is round and with evolving tannins. Long, friendly and persistent finish.
MATCHING
Chicken with plums, pork ribs with teriyaki sauce, grilled pork secret, casserole noodles, pork feet with chickpeas.
WHO CAN CONTRACT
Aalto was founded in 1999 by Mariano García and Javier Zaccagnini and after a few years it was already considered one of the best in the denomination. Today recognized as one of the best in Spain, its wines reveal all the power of the red tinto (tempranillo) variety, the exceptional nature of the Ribera del Duero and the expertise of a winemaker of the stature of Mariano García, winemaker and owner of Bodegas Mauro y former winemaker at Bodegas Vega Sicilia. To the elaborate art of Mariano, it is worth adding the invaluable experience of Javier Zaccagnini in the world of wine, holder of his personal project Sei Solo and previously director of the Regulatory Council of the D.O. Ribera del Duero for six years. A reference winery without a doubt, from Ribera del Duero and Spanish wines in general.
Today Aalto controls 110 hectares of old vines with ancient clones of fine red, of very low yield and very high quality, located in seven municipalities in Valladolid and Burgos that reflect the diversity of soils of the denomination. The winery, located in Quintanilla de Arriba, has been designed to optimize the production process of wines that stand out for their uniqueness and power.
Aalto and Aalto PS, the only two wines that the winery produces, are the result of a meticulous selection of the grapes and a respectful treatment of the raw material. Aalto, with a stay in the barrel of between 18 and 24 months, is a wine that is offered every year if the required maturing conditions have been met; Aalto PS, made with grapes from small selected payments and with a stay in the barrel of between 20 and 30 months, estimates that it can be offered in 7 or 8 harvests of each decade.
AALTO
Grape origin: 100% Tinto Fino (Tempranillo) mostly from very old vines, aged between 40 and 80 years. From vineyards in nine different municipalities on the Burgos shore and the Valladolid shore. The harvest is done by hand, in small boxes of 15 kilos and meticulously inspected, bunch by bunch at the selection table.
Aging: Average aging of 16 months in French and American oak barrels.
