TASTING NOTE
Colour
Clean, clear and bright. Intense yellow color with greenish reflections. Fine and persistent bubble. Very nice to see.
AROMA:
It presents a good maturity on the nose. Intense and dynamic with an elegance dressed in extraordinary subtlety. Golden apple, pineapple and nectarine aromas merge to offer us the freshest and most citric part with the lime peel. They accompany the most lactic notes of pastry, butter and breadcrumbs that end with the most toasted tones of the aging.
TASTE:
Fresh entry with good volume. Live acidity where it is linked with a present creaminess. Fine and very pleasant bubble, and where the aftertaste shows ripe white fruit and pungent hints of dried fruit.
MATCHING
All kinds of seafood, especially oysters, cheeses, cold meats, foies. This cava will make you enjoy the most exquisite meals.

Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply herbicides or chemical pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm.
Winemaking:
After an intense search for optimum maturity, the grapes are manually harvested in 20kg boxes. The grapes go to the selection table, gravity entry, whole presses, obtaining only 35% extraction, meticulously separating the fractions. Aged for more than 48 months, which means more time than required for the Regulatory Board. 100% handmade process. During the rest time and in the silence of the cava we use the natural cork stopper that allows for the longest aging. We use desks. Removal and degreasing are done manually. Moderate dosage of about 6 grams per liter. Expedition liqueur comes from the centuries-old solera. Art that responds to a generational family tradition
To get the most out of this wine, we suggest serving it between 8oC and 10oC.
