Colour
Clean, clear and bright. Cherry color with violet highlights. Medium / high layer intensity. Very nice to see.
AROMA:
Nose with a good presence of red fruit, where they are perfectly combined with the subtle hints of spices and the toasted and vanilla notes of their aging in barrels.
TASTE:
The palate is very well marked freshness, where they are in perfect balance with the density and volume of the wine itself. It has a soft character and can be drunk from the beginning, where it is round and with evolving tannins. Long, friendly and persistent finish.
MATCHING
Chicken with plums, pork ribs with teriyaki sauce, grilled pork secret, casserole noodles, pork feet with chickpeas.
WHO CAN CONTRACT
Aalto was founded in 1999 by Mariano García and Javier Zaccagnini and within a few years it has begun to be considered one of the best in the denomination. Recognized today among the best in Spain, its wines reveal the full power of the fine red variety (Tempranillo), the exceptionality of the Ribera del Duero and the masters of a winemaker of the size of Mariano García. , winemaker and owner of Bodegas Mauro and former winemaker of Vega Sicily Wineries. In addition to the art of Mariano, we must add the invaluable experience of Javier Zaccagnini in the world of wine, the owner of his personal project Sei Solo and former director of the Regulatory Board of the DO Ribera del Duero for six years. A winery without doubt, of Ribera de Duero and Spanish wines in general.
Aalto controls 110 hectares of old vineyards with old clones of very low quality, very low yield and very high quality black, located in seven municipalities of Valladolid and Burgos that reflect the diversity of soils of the denomination. The winery, located in Quintanilla de Dalt, was designed to optimize the production process of wines that stand out for their uniqueness and power.
Aalto and Aalto PS, the only two wines made by the winery, are the result of a careful selection of the grapes and a respectful treatment of the raw material. Aalto, aged for 18 to 24 months in the barrel, is a wine that is offered every year if the required ripening conditions have been met; Aalto PS, made from selected small payments grapes and aged in barrels for between 20 and 30 months, estimates that it can be offered in 7 or 8 vintages of each decade.
AALTO
Grape origin: 100% Tinto Fino (Tempranillo) mostly from very old vines, aged between 40 and 80 years. From vineyards in nine different municipalities on the Burgos shore and the Valladolid shore. The harvest is done by hand, in small boxes of 15 kilos and meticulously inspected, bunch by bunch at the selection table.
Aging: Average aging of 16 months in French and American oak barrels.
