WINERY DOMINIO DO BIBEI RIBEIRA SACRA
Wines made in a place chosen by the monks to lead their life of prayer and work. They are the valleys through which the Bibei river runs, the same valleys that saw how the Romans carried out important hydraulic engineering works for the exploitation of the Las Medulas mines and the Montefurado tunnel; those responsible, also, for the introduction of viticulture in this Galician region.
The Dominio do Bibei Wineries, in the DO Ribeira Sacra, produce a new and elegant wine every year, because each year they obtain a different grape, a grape that grows on a soil dominated by an Atlantic climate. A soil that was shaped by the hands of the winegrower. Some hands that gave the land some silhouettes that still cut the steep slopes today, achieving terraces of stepped vineyards, trying to tame the rugged orography of the Ribeira Sacra. The Dominio do Bibei vineyards, ranging in age from 15 years to reaching those that presume to be centenarians, are located at altitudes between 300 and 670 meters above sea level, on a rocky granite and slate base, in acid soils, poor in organic matter, and with a clay texture. The varieties grown are: Mencía, Brancellao, Mouratón, Souson, Garnacha, Godello and Albariño.
The winery is located in the town of Manzaneda, Ourense; presented its first wine in 2002, although the adventure began in 2000. Underground facilities were designed completely integrated with the environment while minimizing the visual impact, as well as being able to use bioclimatic cooling systems. They took advantage of the natural slope of the slope to build different and independent volumes, and in this way also achieve, due to the effect of gravity, the stress-free transfer of grapes, must and wine.
The wines, of almost artisan production, are made mainly with two varieties, Mencía and Godello, with which the monovarietals Lacima (with a small part of Brancellao) and Lapena are made. His red wine Lalama from Bodegas Dominio do Bibei is one of the current great and renowned Galician reds; It contains a high percentage of Mencía, completed with Garnacha, Brancellao and Mouratón.
WHITE GUARD LAPOLA
Vineyards: aged between 12 and 100 years. Sandy and clayey soils with the presence of schists. Altitudes ranging between 400 and 750 meters.
Varietals: 80% Godello grape, 5% Albariño, 15% Dona Blanca.
Vinification: Manual harvest in 10 kg boxes carried out between the end of August until the end of September. Manual selection in the vineyard bunch by bunch. The grapes remain cold for 2 days at 2ºC. Pressing. Settling. Individual vinification according to the variety and the parcel of origin. Spontaneous fermentation in 6 Hl barrels, 12 and 24 Hl foudres. and ovoid concrete tanks of 7 Hl.
Aging: First part in 600-liter French oak barrels and 1200-liter and 2400-liter Austrian foudres and various uses. Second part in ovoid concrete tanks for its natural stabilization. Permanence on its fine lees. It has not undergone malolactic fermentation.
