Colour
Clean, clear and bright. Straw yellow with golden highlights. Very nice to see.
AROMA:
Entry into the nose with good intensity and with a clear and direct definition. The stone fruit (nectarine and apricot) appears that go hand in hand with the most citric and fresh touches where pineapple stands out. It is worth noting its pronounced aromatic herb character (fennel and rosemary). Above are the empireumàtics aromas of vanilla and small brushstrokes of smoky notes.
TASTE:
Entrance in the mouth wide and unctuous. Good structure where it is harmonized with an acidity of a unique elegance. Retronasal route with sensations of tropical fruit and citrus, where they develop to a certainly savory finish. Long and persistent.
MATCHING
Flavored dishes, rice and baked fish, including white meats, turkey stuffed with dried fruit or nuts, pork tenderloin with boletus sauce and potato gratin, baked chicken with tomatoes, Figueres onions.
To enhance the flavor of this wine, we suggest serving it between 8° C to 10° C and drinking it in a large glass to promote oxygenation and thus its expressiveness.

Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm
Elaboration:
After manual harvesting in the vineyard with boxes of 25 kg, the grapes go through a selection table. Afterwards, direct pressing (of the whole grape), without maceration. Decanting the must for 12 hours. Once clean, ferment in 300-liter French oak barrels, fine-grained and light roasted (1/3 new, 1/3 of a year, 1/3 of two years). The fermentation takes place in a room between 13ºC and 15ºC
cold. Finally, a batonnage is performed periodically to ensure that the lees are in suspension, adding balance to a vertical, expressive and creamy wine at the same time. This wine responds to an old-world sauvignon blanc profile where elegance blends with freshness. It is firm, without sacrificing a sustained acidity, and with great balance between the personality of the variety and the work with the wood, which gives it structure and creaminess. Thanks to the conscientious work in viticulture, the variety reaches an optimum level of maturity.
