Colour: Clean, clear and bright. Pale yellow with greenish reflections. Very nice to see.
Aroma: Great aromatic intensity. As if it were a spring walk, it reminds us of the smell of a bouquet of white flowers, jasmine, orange blossom, roses, aniseed and chamomile infused memories.
Taste: Friendly entry, light body, silky on the go. It closes a fantastic acidity that provides great freshness. Gessamí achieves the balance of its fruity and floral character, moving between the delicate smoothness of unctuous texture and its jovial and refreshing spirit.
Appetizers, salads, vegetables. All kinds of fish and shellfish. Very interesting with Japanese food. Also with rice and paellas.
Organic and biodynamic viticulture:
Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm.
Pre-emptive cold maceration is performed for maximum aromatic extraction followed by a gentle pressing where only the flower must is extracted. Fermentation at a controlled temperature of 15ºC. Stop fermentation in cold to preserve six grams of residual sugar per liter.
