Colour: Pale gold, bright and clear. Fine and persistent foam with small pearls forming a perfect rosary upward, culminating in the formation of a creamy crown.
Aroma: Basically appreciate tertiary aromas developed during its long aging in bottle. Reminiscent of ripe fruit, with hints of fresh bread and an elegant background raisins.
Taste: The palate is a dig pleasantly complex and well structured, developing feelings of nuts, especially hazelnuts, toasted and roasted notes, oddly combined with hints of grapefruit and fennel skin. The aftertaste is long and elegant, predominantly in the memory of nuts and a very slight hint of cocoa
It is an excellent aperitif, also taken at any time with preferably salted pastries stuffed with cheese or anchovies, with hors d'oeuvres of caviar, smoked salmon or foie gras demi cuit. Combines well with elaborate dishes based on white fish, pheasant, ostrich and marinated meats, desserts made with chocolate and candied fruits, or sweet little cakes or souffles.
