Colour

Clean, clear and bright. Cherry color with orange reflections. Very nice to look at.

AROMA:

On the nose is an explosion of red fruit, so to speak, cherries, raspberries, and wild strawberries, followed by more characteristic vegetable and earthy touches of the same variety.

TASTE:

On the palate with unctuousness but with a palpable acidity. Aftertaste where the fruit that was expressed in the nose reappears. Good structure and long finish.

Grilled salmon, smoked river trout, Italian cuisine, spicy sauces, cheeses and sausages.

Manual harvest. Direct pressing of the grapes and fermentation in concrete tanks. Fermentation ends in the bottle, generating carbon dioxide from the natural sugars found in the grapes. This method is called the "Ancestral Method" and is also known as the "Pét-Nat". No filtering or added sugars.
