Wine made from grapes harvested manually at the optimum time of maturation and health, from old mountain vineyards, selected for their organoleptic qualities and low yield. The fermentation / maceration of the grapes is carried out from the fermentation with selected yeasts at a controlled temperature. Once the malolactic fermentation is carried out, it is placed in French oak barrels for 12 months with bâtonnage of lees.
