TASTING NOTE
Colour

Mahogany dark, opaque.

AROMA:

Very elegant, deep, opulent. Notes of dried fruits, ripe fruit, toasted saline background.

TASTE:

Great structure, complex, dry. Soft on the palate with fine bitter notes combined with smoky notes. Final persistent.

MATCHING
Delicious with game dishes and cheeses. Suggest merge with venison stew with mushrooms.
WHO CAN CONTRACT
This wonderful wine has been aged for 30 years with the system of "criaderas y solera". Bodegas Hidalgo La Gitana was founded in 1792 by Roque Verjano, and was at the end of the 19th century when under the direction of D. Eduardo Hidalgo Verjano, the company grew to become one of the most important in the region and main producer of Manzanilla. The Plantation is divided into Pagos of Balbaína and Miraflores. Bodegas Hidalgo philosophy is to combine traditional methods of aging in american oak and the most advanced technologies.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
