Colour: Clean, clear and bright. Pale yellow with golden highlights. Fine and elegant bubble. Very nice to see.
Aroma: On the nose its medium intensity stands out. Unmistakable notes of white fruit appear (water pear), and the most varietal aromas of the variety, where lychees, rose petals, hints of peach in syrup and aromatic herbs stand out.
Taste: It seduces you from the first moment. With a fresh and silky attack it harmonizes with a slightly velvety sweet sensation. Memories of the fruit that appear on the nose return to the palate. Fresh and appetizing finish.
We recommend drinking it very cold, around 6º. Ideal for taking with desserts especially those when the fruit is the protagonist. Also with cheeses, quince. An ideal desktop companion.
Organic and biodynamic viticulture:
Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm.
The wine begins its development as the Wine of Glass, which has been produced since 1997, formerly under the name of Vi de Gel. The process has changed over time according to one premise: the extraction of essence, which represents the noblest part of the grapes. Currently, after years of research, it is making a prototype powered by liquid nitrogen. In the same way that the most prestigious avant-garde cuisines use nitrogen to create the most sublime gastronomic proposals. To achieve the frizzing result, a second fermentation of part of the sugars is performed. This is a sweet cold wine, a new legal category that has recently been added to the Penedès Designation of Origin, thanks to Gramona's research.
