TASTE:
Entry into the mouth where the delicate and fine notes of the passage of time are resurrected, bringing expressiveness to the fruit. A wine with an extraordinary evolution ahead that will continue to gain in complexity until it reaches minerality and hints of hydrocarbons. Its liveliness in the mouth is due to its fantastic acidity that makes it an optimal wine to taste today and in the coming years.
MATCHING
Desserts in all versions, from fruit to chocolate. Its acidity allows it other possibilities such as foie and cheeses, especially pasta

ELABORATION:
The Gramona Vi de Glass is made since 1997, formerly under the name of Vi de Gel. The process has been changing over time with a premise: the extraction of the essence, which represents the noblest part of the grapes. Currently, after years of research, this wine is made by cooling the grapes, before pressing, using liquid nitrogen. Just as the most prestigious avant-garde cuisines use nitrogen to create the most sublime culinary creations. Currently, after years of research, this wine is made with a new prototype powered by two freezing chambers that work at -15 ° C with the help of liquid nitrogen, which improves the freezing of the grapes, achieving greater speed and homogeneity in the process. The must remains in the stainless steel tank for 2½ months. This fermentation takes longer than usual due to the high sugar content. Very concentrated, sweet and refreshing fruity wines are obtained at the same time. A wine designed for evolution and development in the bottle. This process begins in the cellar, remaining in our cellar for a minimum of 10 years, so that when it goes on sale, we can enjoy the complexity that time leaves behind, giving a huge pleasure to each sip. This is a "sweet wine of cold", a new category recently added to the regulations of the Penedès Denomination of Origin.
