TASTING NOTE
Colour

Clean, clear and bright. Pale yellow with greenish reflections. Very nice to see.

AROMA:

Entry into the nose of medium - high power. It is frank and elegant, where its floral notes combine with its character of fruit and citrus (apple, pear, nectarine and lime). Herbaceous memories of aniseed are expressed that give the wine the most balsamic sensation, where they enter with a good balance with the subtle aromas of yeast for their work on lees.

TASTE:

Fresh and subtle entry into the mouth. Varietal from Macabeo where its work on lees gives it a silky texture. Dry, long finish with a very good structure.

MATCHING
Fish, seafood, medium strength cheeses, canned goods. It is ideal for snacks and tapas, thanks to its freshness and versatility.

"Gramona has been working her lands uninterruptedly since the mid-19th century. Six generations of a family with a winemaking tradition that for years has worked with respect and passion for the land and with an indisputable seal of quality. Faithful to a sustainable philosophy for the environment, we turn to biodynamic agriculture for the cultivation of vineyards and for the production of wines and sparkling wines " Organic and biodynamic viticulture: Based on the careful observation and treatment of the factors that influence the land and its habitat. No herbicides or chemical pesticides are applied. Natural resources are used with the main objective of preserving the balance of the environment and spontaneous vegetation covers are maintained to achieve spongy soils. Through biodynamics, a step beyond ecology, the vineyards are vivified and the aim is to increase their levels of biodiversity: infusions and decoctions of plants are applied to avoid pests, and the preparations themselves and the animal compound itself are made and vegetable from the medicinal plant garden and the cow, sheep and horse farm. Elaboration: It is harvested manually, a selection table is used and the grapes are entered by gravity. Cooling of the grapes, pressing of the whole grape and meticulous fractionation of the must. Maceration between 0ºC and 5ºC with the lees (up to 20%) obtained from the decantations from Maccabees is used to make sparkling wines. During fermentation, these precious precursors that had been preserved in cold are incorporated. The maceration lasts from 2 to 3 weeks. Fermented in barrels of various uses (more than 10 years), no contribution from the wood is sought but a slight mineralization is sought. The wine spends 6 months in the bottle. The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
