TASTING NOTE
Colour

Intense and bright golden-yellow color, with very fine, well-integrated bubbles that form a persistent crown.

AROMA:

Complex and evolved nose featuring aromas of ripe fruit, toasted nuts, pastry, and a subtle touch of noble oxidation typical of the solera system.

TASTE:

Broad, structured, and very creamy on the palate. It shows a balanced acidity that provides freshness despite its long aging, with a long and persistent finish reminiscent of baked apples.

MATCHING
A highly gastronomic cava. It pairs perfectly with stewed white meats, poultry, fish in creamy sauces, foie-gras, and long-cured cheeses. It is also ideal for accompanying a full high-end gastronomic meal.
WHO CAN CONTRACT
Clos Rovires is a unique creation by Joan Colet, as it is crafted using the Solera system (blending older vintages with younger ones). This method, rare in Cava production, provides exceptional complexity and consistency in its aromatic profile. It is a long-aged Brut Nature that seeks the elegance and character of great collector's sparkling wines.

Wines whites designation of origin D.O. Cava
Cava and Champagne are elaborated with the same procedure, called traditional method or champenoise. The process definition gives the name to the final product, a sparkling wine produced with the classic method of fermentation in bottle and ageing in “cavas”. Recently is one of the more dynamic sectors in the world of wine, with a whole production that has exceed the 220 millions of bottles per year, reaching customers from all over the world.
