HACIENDA SOLANO
It is a small family winery, located in La Aguilera, Burgos with selected vines over 60 years old and with a soil made up of marl, sandy clays and limestone. A town that has some of the best and oldest vineyards in the D.O. Ribera del Duero.
Toni Sarrión made his own wine in 2016 and has participated directly in the production of the wines since then, together with Sophie Kunh and the rest of the Cubillo Solano family, respecting his philosophy and joining the project a year later.
His philosophy has always been one of minimal intervention, working in a traditional way, without yeasts, without addictions, with respectful aging, wanting the vineyard to express itself freely.
Sustainable viticulture without the use of herbicides or pesticides.
Manual harvest in boxes of 12 kg.
Varieties: Tinto Fino with a small percentage of Albillo.
Winemaking: Each plot separately. Temperature controlled stainless steel and concrete wine tanks. Cold maceration for 24 to 36 hours at 8-10ºC. Alcoholic fermentation for 11 days with small pump-overs and "pigeage". Average temperature of 26º. Post fermentation maceration for 5 days.
Aging: 14 months of mixed aging between 225 L French oak barrels and 6 months in 500 L concrete tanks.
