Colour
Clean, clear and bright. Intense ruby color with garnet reflections. Medium - high layer intensity. Very pleasing to the eye.
AROMA:
Complex and mineral aromas combine with the roasted notes of aging.
TASTE:
The entry in the mouth is soft, where it slowly makes way with an intense structure and sweet tannins. Wine with great complexity and a high aging potential.
MATCHING
Complexity and structure, therefore, versatility at its best. Game silver (from stews to civets), meats, rice, cheeses, etc.
WHO CAN CONTRACT
The facilities of the winery have a high technology. The fermentation tanks are made of stainless steel, designed by Peter Sisseck himself with the purpose of improving the natural contact between the must and the skins during fermentation. They are equipped with temperature control and have Mono-type pumps, which allow smooth transfer. At Hacienda Monasterio, the grapes undergo manual selection, so that only the best fruits are used for winemaking.
To ensure the quality of the harvest, Hacienda Monasterio has chosen a tight planting framework, of about 4,000 plants per hectare with 1-1.5 kilograms per vine. Pruning is of the “simple goyut” type, with a six-bud stem and a two-bud thumb. This limited production allows early maturation, which is very convenient in this region, which can be affected by rain from the second half of October. The main grape variety is Tinto Fino, a clone of Tempranillo characterized by large clusters and high yield.
