Colour

Pale yellow with greenish reflections.

AROMA:

Very delicate nose where notes of white fruit such as apple and pear are appreciated.

TASTE:

Good palate, delicate richness of nuances in very good Intonia. Light herbal touches, fennel and a marked acidity.

Ideal with vegetarian cuisine: Salads, vegetables, in different preparations (raw, grilled, stewed). Also with seafood and fish from the Mediterranean Coast as its fantastic rice and noodles.

The GR 5 is the path that crosses our vineyards. Xarel.lo is the queen variety of our area. It has good structure and aging capacity. The Xarel.lo vineyard of "El Serral" reflects the originality of this wine for its spectacular old vines that give us fine and elegant wines that capture the identity of the terroir.

Winemaking in the cellar:
Fast and gravity entry into the cellar. Short maceration with the skins. Low pressure pressing with a 50% flower must extraction. 20% ferment it in chestnut and French oak barrels for 4 months and 80% in stainless steel tanks at controlled temperature. With the finest lees we make a "botonage" both in the barrel and in the tank.
