Colour

Clean, clear and bright. Cherry color with garnet reflections. Medium layer intensity. Very nice to look at.

AROMA:

First cup contact where the aromatic catalog is expressed in equal parts. The notes of black (blackberry) and red (raspberry) fruit begin, followed by the more balsamic ones like licorice, and more subtly the toast of their short stay in barrels.

TASTE:

In the mouth with elegance and an acidity that gives it a fantastic life. On the palate with round and mellow tannins and where they lead you to a fresh, long and persistent finish.

Perfect with starters, tomato salad with burrata cheese, grilled white meats and vegetable garnish, pasta dishes with sauce, etc.

Alta Alella Mirgin, the family project of Josep Maria Pujol-Busquets and his wife Cristina Guillén, together with the his two daughters, Mireia and Georgina. They have been following the principles of organic farming since the beginning, in 1991, and where they recovered vineyards of more than sixty years that they planted on terraces with the traditional varieties: Pansa Blanca and Mataró. It was in 2017, when the Vallcirera place was recognized as a Qualified Place, a distinction and reward for many years of work to get high quality cavas with their own personality. At the same time, as the first sulfur-free cava maker in the D.O. Cava (Since the 2006 harvest), Alta Alella Mirgin still works in its line of cavas and natural wines Cellar de les Aus.
