Vermuteria de Galicia St. Petroni made following a meticulous selection of Albariño grapes, from the Rosalianos vineyards of Pazo Arretén (Winery with D.O Rias Baixas, sub-area of ​​Ulla Padrón), which gives it the singularity of being unique in the world.
The Ulla sub-area, and especially the Padrón Valley, give the Albariño grown in this land exclusive acidity characteristics that make St. Petroni a genuine and inimitable product. In its careful preparation, the best Albariña grape is selected, which is vinified on its own lees (The lees are fermentation yeasts that are still present in the wine base, acting like grannies, cooking slowly, which gives structure to the previous wine base. to the mixture with the macerate of pure autochthonous and selected botanical alcohols)

Pure alcohols from albariño distillates are used in the maceration process.

In the case of red, we macerate with 29 plants, among which absinthe predominates and many others such as laurel, lemon verbena, mint, lemon balm, chamomile, sage, citrus and hibiscus flower (responsible for providing copper-red tones to Petroni Vermello)
