Colour: Pale yellow, bright, greenish.
Aroma: Of frank fruity aromas with hints of stone fruit (peach). , Ripe banana and pear, opening towards more balsamic more varietal notes such as fennel, menthol and cut grass, jasmine, fresh and powerful.
Taste: The passage through the mouth is markedly fresh, with freshness reinforced by the presence of carbonic and citric acidity, a refreshing, structured and powerful aftertaste, a certain aftertaste with fresh plant notes and persistence in the finish.
Both white and blue fish, shellfish and crustaceans ( oysters, sea urchins, mussels ). Great on entrees and appetizers. It harmonizes perfectly with vegan cuisine. It is even a good ally with Oriental and Japanese cuisine.
The roots of "Cal parató" are in Barcelona, specifically in the Sants neighborhood. The Elias family cultivated vineyards since the 17th century in the lower part of the Montjuïc mountain and in the plains located in the Marina de Sants. A press at home allowed to make wines that were sold in bulk in the area.
The heir to the family estate, Josep Elias Andreu, recovered the family's winemaking tradition in 1975, founding the current Sociedad Parató Vinícola, buying a total of 94 hectares of farms with vineyards located in the heart of Alt Penedès, and built the winery of production in 1977.
The family winemaking tradition continues. The four brothers Josep, Montse, Esther and Jordi Elias Terns give continuity to the principles that have always governed the family: "make the best quality wines and cavas, 'only and exclusively with their own grapes grown by themselves".
The techniques used in organic agricultural production are respectful with the environment and with people so that it restricts the use of synthetic chemicals (hormones, herbicides, chemical fertilizers, pesticides, etc.).
