TASTING NOTE
Colour

It has a golden yellow color, clean and bright.

AROMA:

On the nose we find fragrances of white flowers, mixed with delicate perfumes of rose and grass.

TASTE:

The palate has a very long palate with notes of floral honey, good minerality, providing a silky texture thanks to hints of butter, and ending with licorice, fresh and balsamic flavors.

MATCHING
It can be enjoyed on its own or paired with steamed fish.
WHO CAN CONTRACT
Daniel-Etienne Defaix owns one of the oldest properties in Chablis and his family has been winegrowing for 4 centuries. The Domaine has 28 hectares planted with the chardonnay variety on a "kimmeridgien" soil, therefore from the Upper Jurassic, with a calcareous clay base and a multitude of fossils in its interior. It is a very steep slope with a southeast exposure, which, consequently, helps to avoid spring frosts, as it receives more hours of sunshine in the morning. Daniel-Etienne Defaix produces: - Two Chablis cuvées : Vieilles and Très Vieilles Vignes. - Three Chablis Premier Cru : Las Lys, Vaillon and Côte de Léchet. - Two Chablis Grand Cru: Blanchot and Grenouilles. - One Burgundy Rouge.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
