TASTING NOTE

Colour: Straw yellow, with lemony reflections, bright.

Aroma: Olfactory phase, interesting, combination of olfactory memories ripe white peach fruit, the sensation of lees is present, honeyed, pastry, medium high intensity.

Taste: A salty point, it is slightly unctuous, enveloping, velvety, well integrated acidity, mineral, ripe white fruit, red apple, melon.

MATCHING

Ideal with appetizers, the fantastic quality preserves of the Atlantic. Grilled or baked fish, tuna tartar, sushi, baked turbot with Galician potatoes, seafood rice, all types of seafood in general from the area, both steamed and grilled.

ADDITIONAL INFORMATION

Paco & Lola is a winery founded in 2005 on the initiative of a group of winegrowers and wine producers from the O Salnés region, who decided to professionalize their production. This cooperative is called "Sociedad Cooperativa Vitivinícola Arousana", being the most important cooperative by number of members of the D.O. Rías Baixas.
The winery has 200 hectares of its own vineyard spread over more than 1800 plots, characteristic of the Galician smallholding and located entirely in the "Val do Salnés" sub-area.
The winery facilities are equipped with the latest technology applied to the wine sector. This modern technology, together with the tradition of the winegrowers and the know-how passed down from generation to generation, allows to obtain the maximum expression of the grape, guaranteeing a magnificent result vintage after vintage.

Elaboration:
100% Albariño. Pre-fermentation maceration with carbonic snow at 6º C. for 8 hours. This technique allows to extract a greater quantity of aromatic substances contained in the grape skin. After maceration, the flower must ferments 16º C in stainless steel for 3 weeks.
