Colour: Clean and bright. Visually, we can enjoy a cava with an attractive cherry color with slightly salmonized reflections. It has a fine and very persistent bubble.
Aroma: In the nose, typical and characteristic aromas of the same Trepat variety are presented, with aromas of red fruits, and more slightly the balsamic notes, where we can appreciate the most timid liquorice.
Taste: Very elegant and very fine mouth entry. Where the typical notes of the variety stand out, the fruity elements are presented, and with a touch of sweetness more than well represented, they make a cava to taste with ease.
Sarral is located in the middle of the Conca de Barberà, a region with deep-rooted wine tradition. The Roman archaeological remains found in Sarral certify the existence of this culture in which the wines were of great importance. But it will not be until the middle ages that the cultivation of the vineyard will have a leading role. A distinguishing characteristic quality is the role played by the monks of the Cister and the Temple established in the region, who transmitted their experience.
Vinícola de Sarral SCCL has its facilities located, which in several stages has been expanding and modernizing, around the modernist winery built in 1914, on a plot of 12,000 m2 that currently occupies the entire premises, where the various buildings are located: the wineries, the offices located in an old modernist refurbished feed mill, the cellars, warehouses, exterior warehouses, the grocery store open to the public open every day, etc., joined by two interior plazas that vertebrate the whole.
It has more than 100 tanks of different volumes, with a total capacity of over 9,000,000 liters. The wineries are equipped with the latest technology to treat the wines with the utmost care from the reception of the grapes to the bottle, with winemaking and cava production methods based on modern oenology and with the utmost respect for the environment.
2,000m2 of underground warehouses where up to 2 million bottles of cava rest in second fermentation and the aging rooms in bottles and aging in oak barrels.
The modern bottling plant has an isobarometric filler, lids, labellers, packaging machines, etc. Being a means of production in constant evolution to facilitate at all times the necessary control to guarantee the highest quality of our products in the most demanding markets. Following a philosophy oriented towards the future, with a desire for technical progress but never forgetting our already centennial history.
The winery built in 1914 under the auspices of the Commonwealth of Catalonia is the work of the illustrious architect Pere Domènech i Roble, the result of the solidarity effort of the local peasantry to build a rational building, of great architectural value, pioneer in terms of incorporation into the industry agrarian of technical, constructive and oenological conditions.
