TASTING NOTE
Colour

Clean and bright Cherry color cherry with slightly orange reflections. Very nice to look at.

AROMA:

Entry into the nose with very good complexity, where the black and red fruit are expressed with all their magnitude, sweet spicy notes and to finish some mineral and very elegant touches. All combined with roasted aromas due to its barrel aging.

TASTE:

In the mouth, it is elegant, unctuous and intense. The black fruit covers the entire palate with exuberance and perfectly balanced tannins. Its astringency is very moderate but fair to balance its maturity and alcoholic strength. Very long and persistent.

WHO CAN CONTRACT
The Reserva de Carraovejas is made mostly with grapes of the tinto fino variety to which a small percentage of cabernet sauvignon and merlot is added. The predominant soils on the slopes of the farm from which they come have a texture frank limestone with a medium grain size, but at the same time very well drained for an adequate maturation. The plots were planted between 1988 and 2011 with a Double Cordon Royat cultivation system. The harvest is done by hand using boxes of small volume and after passing through cold chamber enters the tanks by gravity. The fermentation takes place in small stainless steel tanks and French oak vats managed under "Haute futaie" with native yeasts and bacteria native to the farm, unique and original, to fully express the characteristics of the terroir, respecting the uniqueness of the every vintage The wine enters selected barrels of French oak extra fine grain using gravity and remains 12 months in them. Afterwards, it is clarified with natural egg white and bottled by gravity with a selected natural cork stopper. It is kept in bottle until 36 months from the beginning of its preparation, before going on the market.
