INFORMATION OF INTEREST Red Ecologic Espelt Solivent 2018

TASTING NOTE

Colour: Clean and bright. Violet color with reddish reflections, with medium layer intensity. Very pleasing to the eye.

Aroma: In the nose, black fruit over the red predominates, accompanied by a balsamic and Mediterranean undergrowth, where the rosemary and thyme are expressed. Spicy notes appear more delicately and licorice.

Taste: Entry into the mouth, where we find a fresh and very sweet wine, with tannins that are fantastically round with a mineral background in homage to the schist soil of the Empordà.

MATCHING

To accompany; Pasta with Bolognese sauce, with tomato and oregano. Grilled vegetables, chicken with herbs from Provence. Perfect with sausages of the best: Iberian pork, sausage, etc. Sensational with semi-cured cheeses.

We recommend serving it slightly cool, at about 15oC - 16oC, not too cold, or we will lose the aromas.

ADDITIONAL INFORMATION

Own vineyards in the D.O Empordà, planted twelve years ago on granite glacis soils, at the foot of the Sierra de Verdera, at the end of the Pyrenees. The vineyards are located around the winery and we cultivate them according to the criteria of ecological viticulture, which is where we want to direct our wines. The varieties chosen are the Black Lledoner (Black Grenache), due to their ability to grow well in the areas where the north wind blows; the monastrell, a variety of long cycle that goes through a two-stage pruning process to adjust its dominantapical; and the Sirà, which is protected by the wind for Grenache. A 100% Mediterranean blend.

All the grapes are harvested by hand. Cold pre-fermentation maceration. Each plot is fermented separately and a low percentage of grapes are introduced with stem. Malolactic fermentation and aging on lees in stainless steel tanks. The wine is not clarified, it stabilizes naturally during winter. Very light filtration. The whole process is carried out following the strict parameters of the Catalan Council for Organic Agricultural Production.
