TASTING NOTE
Colour
Clean, limpid and bright. Pale yellow color with grayish reflections. Very pleasing to the eye.
AROMA:
Entering the nose with floral aromas and sourdough nuances that suggest fresh and subtly marine sensations.
TASTE:
In the mouth it is delicacy and volume. With a well-marked acidity that gives it a safe evolution, present and delicate tannins and an elegance that will not leave you indifferent.
MATCHING
We recommend serving this wine at around 10ºC. To accompany ... dishes with the presence of aromas and tastes such as black rice, denied cod or sea urchins go very well
WHO CAN CONTRACT
It is a goblet vine planted in 1910, 108 years old at the time of harvest. The soil is schist and has a slope of 3%. Some parts of the vineyard have dry stone terraces. This plot has mainly Red Grenache, White Grenache and Macabeo, although in the study that has been done up to 9 white and red varieties have been found, and all of them are part of the coupage of this wine. Organic viticulture, spontaneous plant cover, winter conservation pruning and light spring pruning are used, since the vigor is very low. The three main varieties are harvested separately, the two Garnachas on August 30 and the Macabeo on September 5.
Elaboration
The grapes are cooled to 8ºC and pressed once cold. Only the flower must is used. A static racking is carried out for 48 hours. Fermentation is spontaneous. Once the three fermentations are finished, an assembly of the three wines is made and they are aged, with lees, in a 19 hl cement egg for seven months with their mothers. It is bottled on May 5.
