INFORMATION OF INTEREST Graham's Vintage 2000
Seen by many as the jewel of Porto, this wine is only elaborated in exceptional vintages. It's a must to pass through the rigorous controls of the Instituto dos Vinhos do Douro and Porto to obtain this denomination. Once obtained the qualification of VIntage, the wine must stay from 2 to 3 years in oak barrels. Later on they're bottled and sealed without filtration. At this moment is when take place the process called "reductive ageing"(so called beacuse the null role of the oxygen i the process). The magic of the vintage will depend on its life inside the bottle, it can evolve during decades (up to 50-100 years). During the first 5 years it will keep the intensity from the Ruby with very fruity aromas. After 10 years will show garnet tones with notes of candied fruit. Once arrived at maturity will acquire complexity and subtlety. The vintage will always be shown in the product label.
