TASTING NOTE
Colour

Clean, clear and bright. Cherry color. Very nice to see.

AROMA:

On the nose, it is perceived very good complexity, where it is expressive and with character. Fruit notes appear, where raspberries, strawberries and cherries with liquor take center stage in more shy but present floral and herbaceous memories.

TASTE:

Appetizing on the palate with a pure tannic structure. It stands out for its softness on the palate that is perfectly balanced with its acidity. Glyceric that transforms with elixir, and develops an elegance of memorable persistence.

MATCHING
Pastry based on red fruits. In chocolate it finds a great ally, since it gives it different intensities and textures, Catanias, Brownies, Chocolate Coulant with red fruit coulis. It also accompanies medium-high strength cheeses, including blue cheeses.
WHO CAN CONTRACT
Organic and biodynamic viticulture:

Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm.

Elaboration:

Grapes from Mas Escorpí, family owned 350m high. Cultivated since 1984. At the time of harvest, the grapes reached 24 degrees of probable alcohol for perfect health. Two thirds of the vineyard are harvested in 20kg boxes and kept in the breeding room for 36 hours with the aim of lowering the temperature to 0 ° C. We proceed to destemming by selecting grain by grain from the selection table. They are taken to a wooden tub where they are pre-fermented (5º C) for ten days. They are stirred every 12 hours for intense color. When it starts to rain, the skins are removed immediately. That same day, the third of the grapes that are left in the vineyard, the Pinot Noir, is harvested that has been ripe and harvested. This is added to the must that begins fermentation at 13º C. Fermentation lasts almost 6 weeks until it stops naturally with 150 g / l of sugar and 13% vol. Finally, the wine is aged in French oak barrels for 7 months to finish the wine and add more complexity.

Wines fortifieds designation of origin D.O. Penedès
Between the cities of Barcelona and Tarragona is located the Penedès region, with the largest wine-growing surface and the largest production in Catalonia. Bordered by the Mediterranean Sea, the Pre-litoral Mountains and from the Llobregat River to the Gaià River. The most important cities of this appellation of origin are the Vilafranca del Penedès (capital city) and Sant Sadurní d’Anoia. The more planted variety is Xarel·lo, with a surface of more than 7000 hectares.
