Colour: Clean, clear and bright. Very intense gold color. Very nice to see.
Aroma: The nose is deep and intense, exuberant aromas of bone fruit appear: apricots, peaches, tartlets and quince, which are paired with a fan of floral notes at its maximum expression like chamomile, thyme and rosemary. All finished with the honey note right and necessary to sweeten the experience.
Taste: It enters the mouth with amplitude and with good glyceric sensation. Medium bodied, it has a great fruit load on its way through the mouth, which becomes extremely appetizing and fresh. Post taste long and persistent.
Dessert of fruit and tropical fruit with meringues and candies. Try it with foies and cheeses, especially medium strength soft pies.
Organic and biodynamic viticulture:
Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply chemical herbicides or pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm.
About ripening of the grapes in the vineyard of our plots of Les Solanes and Mas Escorpí. We select in the field the rows of vine that are meticulously observed. The vineyards are protected by veils to prevent the birds from eating these precious and sweet fruits. Finally we will see "late" and manually. The collected fruit goes through the selection table where the Gramona team and volunteer collaborators and friends reinstall an exhaustive selective criterion. Choosing, from each grape, the grains that reach the perfect dehydration. Fermentation in second-year 300 liter French oak barrels. Here they will stay for 50 days with natural stop of fermentation by their own residual sugars. This wine belongs to the category naturally sweet wine. Fermentation temperature of 18 ° C After slow fermentation it is taken in large format bottles called Matusalems, with a capacity of 6 liters. Here you will spend the time needed to achieve an evolution that only the glass vessel gives, inert but with the controlled exchange of oxygen through its cork stopper. These Matusalems rest in a shelter cave just below the vine that gives rise to this wine.
