TASTING NOTE
Colour

Clean and bright. Straw yellow color with golden highlights. Fine and constant bubble with persistent crown. Very nice to look at.

AROMA:

On the nose, a very mature cava is shown, where the memories of citrus compote, balsamic and earthy aromas of sota forest are presented.

TASTE:

Entrance in the mouth where it has very good intensity. freshness and different aromatic notes, with excellent creaminess and smoothness with a long and persistent finish.

MATCHING
Due to its complexity and persistence, it is an ideal cava to accompany a meal from start to finish, also with risottos, seafood, as well as duck magrets and stews.
WHO CAN CONTRACT
Caves Vives Ambròs is a small family business located in the small municipality of Montferrí in Alt Camp, Tarragona. Heirs of a great winemaking tradition that goes back several generations continue to work handcrafted faithful to their philosophy, both in the vineyards and in the cellar, where all the work is done manually from the rinsing of the bottles in desks, the disgust, the handmade lacquer and until the printing of the date of disgorgement in each bottle. They elaborate the cavas traditionally with a minimum aging of 42 months. Residual Sugar: 1.5 g / L

Wines whites designation of origin D.O. Cava
Cava and Champagne are elaborated with the same procedure, called traditional method or champenoise. The process definition gives the name to the final product, a sparkling wine produced with the classic method of fermentation in bottle and ageing in “cavas”. Recently is one of the more dynamic sectors in the world of wine, with a whole production that has exceed the 220 millions of bottles per year, reaching customers from all over the world.
