TASTING NOTE
Colour

Clean, clear and bright. Onion skin color with gray reflections. Very nice to look at.

AROMA:

The nose has a very characteristic freshness. Subtle aromas of red, spicy fruit, and a minerality translated with smoky notes that makes it extraordinarily complex.

TASTE:

On the palate with exceptional acidity. On the palate with complexity and with a fruit that is subtly expressed along with a minerality worthy of the terroir where it comes from. Present and elegant bubbles with a long and fresh finish.

MATCHING
Ideal with sashimi, sushi, grilled seafood, smoked salmon, cod carpaccio, etc.
WHO CAN CONTRACT
Finca Viladellops Ancestral is a sparkling wine made with the ancestral method (a single fermentation), a new paradigm for the vinification of quality sparkling wines, without the addition of sugars or yeasts. Accidentally discovered (as with the best things) in the 16th century in Limoux, and in which it is currently part of the usual method of the famous sparkling Blanquette de Limoux, and which today is also being revitalized in Catalonia. Especially in the Penedès. Made exclusively with a recently recovered variety; Xarel·lo Red from old Garraf vineyards. Aged for thirty months and with the minimum SO2, and where the levels of sulphites with information are incorporated in the label of each bottle.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
