TASTING NOTE
Colour: Pale yellow with lemon reflections, very clear, clean, bright, pleasing to the eye.
Aroma: Of remarkable intensity, frank, a marked primary character, fresh white and citrus fruit ( peach, fuji apple ), there are also olfactory records of fresh herbs, wild flowers. Elegant, subtle and very pleasant on the nose.
Taste: Well constituted, good passage through the final mouth, long, persistent, dry. A live wine, great balance, fruit-acidity. Pleasant in the mouth, invites you to continue taking it. Citrus flavors such as pink grapefruit, are in a perfect balance in the final product, very subtle sensations of herbal teas, fresh chamomile.
MATCHING
Young, fresh white, ideal with soft dishes, pure natural foods with little culinary treatment. As starters, salads, fish tartare, seafood carpaccio, also fresh pasta with vegetables or boletus. Ideal with rice and noodles.
Service temperature from 10 to 12º C.
ADDITIONAL INFORMATION
The "Vinyes dels Aspres" winery is located in the municipality of Cantallops, the northernmost inland town of Alt Empordà, sheltered by the Albera massif, a territory of gentle undulations at the foot of the Mediterranean Pyrenees. In this region, especially wild and dry, is where the vines are, all of them family-owned for generations. There are about thirty hectares registered in the DO Empordà, with an average age of 30 years, the native varieties Garnacha and Cariñena and a little Picapoll are worked, as well as Cabernet Sauvignon, Syrah and Merlot.
The terrain is granite and slate, old and stony soils, very suitable for obtaining quality grapes.
The winery is in Can Batlle, a 17th century manor house, where wine and oil, and even cork stoppers, have always been made.
It is necessary to highlight the flourishing stage at the beginning of the 20th century, when the farm was run by a person with a great personality, Narcisa Vicens, the "Grandmother Master". One of her daughters, María Sobrepera, married the famous musician and composer Eduard Toldrà, who summer after summer imbued Can Batlle with music and culture.
Currently, a pneumatic press is available to produce the highest quality white vinifications, and twelve stainless steel vats for maceration and fermentation of red wines, all at controlled temperatures.
The old cellar is where the wine is aged in French Allier oak barrels, and where it rests in its final evolution in the bottle.
Elaboration:
It has been made with 100% White Grenache. The harvesting of the grapes is done manually and then it is transported to the winery to make its selection and continue its fermentation process.
