TASTING NOTE
Colour

Clean, clear and bright. Pale yellow with greenish reflections. Very nice to see.

AROMA:

Nose where an explosion of tropical fruit, the passion fruit, passion fruit, melon, pineapple and mango stand out. A few minutes after the glass, the aromas of vegetables emerge, where the touches of vegetables and the asparagus touch take over.

TASTE:

The palate is concentrated, fresh and full of moving richness. Refine the palate with its lively and well-structured acidity, where it leads to a dry, citrusy finish.

MATCHING
Ideal with pasta salads, steamed mussels or cockles, sautéed pasta dishes with mushrooms, garlic and parsley, grilled vegetables, onions, beef carpaccio, etc.
WHO CAN CONTRACT
The vines, which are almost 30 years old, were grown on a series of north facing gradually descending terraces in stony, free draining soil. We deliberately had a mixture of exposed and shaded fruit on the sauvignon blanc vines to ensure a wide spectrum of flavours. The semillon fruit, which naturally ripens later, was fully exposed to the sunlight. We picked the sauvignon in stages during April, timing each harvest to further optimise the grapes’ range of natural flavours. The semillon was harvested in May, by which time it had achieved optimal physiological ripeness. These varieties were fermented separately, the semillon in old French oak barrels to help develop the wine’s texture, without adding oak. Both varieties were then aged on their natural deposits of yeast lees (sur lie) for eight months to fill out the palate, the semillon portion remaining in barrels throughout this time.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
