TASTING NOTE
Colour

Straw yellow with golden highlights, clean and bright.

AROMA:

Good aromatic power, clean and frank on the nose. A good union of two primary olfactory families such as those of citrus fruits (grapefruit, lime) and also tropical fruits (pineapple, mango), very subtly some green, vegetable notes (fennel, flowers). With the second family of aromas we find the roasted (roasted nuts, hazelnuts) and very slightly species (vanilla).

TASTE:

With volume, body, flavor, good structure, good mouthfeel, and a long finish, a sensation of mouthfeel, glyceric, slightly unctuous, flavors of its phase, of its aging in barrels, notes of spices, nutmeg, vanilla, fine and elegant woods, very subtle, lactic notes, butter. Interesting and complex. A long-lived white.

MATCHING
It came with structure and flavor. Quite versatile with different dishes, from broth rice, paellas and fish stews type "suquets", "zarzuelas", to white meats made with light sauces or stews. Service temperature 8 to 10º C.
WHO CAN CONTRACT
CAN PARDAS It is an old farmhouse dating from the 19th century, where all its wines are born, in vines of up to sixty years. A farmhouse that acts as a cellar and a home. Two lovers of viticulture and enology, Ramón Parera and Jordi Arman, winemaker and agronomist respectively, Celler Pardas was born in Penedés. In 1996, they buy a 60-hectare farm. In 1998 they planted their first vine, always respecting the margins and forests of the farm, since it is the essential complement to their agricultural ecosystem. Being the year 2004 the first vintage of the wines from the Pardas winery .. Finca Can Comas is located between 200 and 300 meters of altitude, in the municipality of Torrelavit. All the wines from the "Celler Pardas" winery arise from the utmost respect for the raw material, the grape. Its wines are easily recognized by the winery's emblem, a wild boar, a friend of night walks in the vineyards. Elaboration: Pardas Pur Xarel.lo is a wine from two vines planted between 1979 and 1981. It has aged 8 months in 90% French oak and 10% chestnut oak barrels. It is a very limited production that does not reach 4,000 bottles.

The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà.
