La Salada L'Ermot is a white wine from D.O. Penedes elaborated by La Salada in the Pla del Penedés, Barcelona. This is a personal project of Toni Carbo, a winemaker also in Mas Candí and his wife Anna. The vineyards from where the grapes come to make their wines are Toni's grandfather on clay-calcareous soils and they have never been treated with herbicides or pesticides, that is, in an ecological way. La Salada L'Ermot is made with the Macabeu variety, it is gently pressed and left to ferment with its yeasts in a stainless steel tank in which it rests together with its fine lees for 5 months without adding sulfur.
