Colour
It is pale yellow with greenish reflections and bright.
AROMA:
The aromas are intense and complex. The fermentation in barrel brings smoky and toasted tones. Its contact with the mothers brings back memories of too much bread mother. The Chardonnay variety transports us to fragrances of citrus and white flowers, such as orange blossom, and also reminds us of citrus fruits.
TASTE:
The palate is dense and fresh at the same time. It is very sweet and has a persistent finish with balsamic notes.
MATCHING
This wine creates perfect harmonies with fish and seafood in general.
WHO CAN CONTRACT
The winery was founded in 1647, and has eleven generations who have worked hard to achieve what the winery is today.
The first people who bore this surname came from the Ebro River Valley, in the sixteenth century, from Çibitz, a small town in Lower Navarre, in France, which lived through the Calvinist wars and, therefore, generated a migratory flow towards Southern Navarre.
Over the years, the various Chivite generations have been penetrating the world of wine and creating a business with great potential, from 1860, when Claudio Chivite began to sell wine in France, when there suffered a plague of powdery mildew, until 1956 when Julian Chivite implements various renovations in the business and become one of the first bottling wineries in Spain. Over the years, the Chivite 125 Collection appeared on the market in 1985. The intention of this collection was to commemorate the 125th anniversary of the first export of the Chivite winery in 1860. In 1983, the first vintage of Chivite Colección 125 Chardonnay appeared, one of the best white wines of Spain.
