Colour

Light yellow, lemon reflections, bright, denotes youth.

AROMA:

High intensity, marked by a varietal character, a fruit ( nectarine, peach ), fine sweet pickles, lemon curd, green tips, fresh vegetables, peppermint, very frank, fresh, enveloping.

TASTE:

The palate is very fresh, savory, fruity, sweet ( pineapple, grapefruit ), a long journey, with a slightly glyceric, unctuous mid palate, a quality wine that pleases. The aftertaste is persistent.

MATCHING
As an aperitif, with canned premium molluscs from the area ( clams, cockles, razor clams ). Also molluscs and shellfish from the Rias, with soft, natural, steamed, raw, grilled cooking. With rice ( black rice with cuttlefish, rice with carabineros, seafood rice, rice with monkfish and shrimp ).
WHO CAN CONTRACT
Pazo Señorans, today converted into a winery, is a magnificent representative of the 16th century manor houses, built in the countryside with all the charm and lordship of times past. The winery brings its first harvest to market in 1989. El Pazo and the winery, initially owned by the couple formed by Marisol Bueno and Javier Mareque ( now also in the hands of their four children, Marisol, Vicky, Javier and Santiago ), began its winemaking career in 1989, although the cultivation of vineyard starts earlier. The name of Pazo Señorans is of unknown origin, it is not known if the place gives its name to the Pazo or it is the Pazo that gives its name to the place. Elaboration: Stainless steel aging on lees for at least 5 months . A wine that improves in the bottle, an optimal period of 1 to 3 years in the bottle on the corresponding vintage date. Winemaking: 100% Albariño, Vineyard in the Salnés Valley. Type of vineyard conduction in vine.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
