Colour

Straw yellow with golden reflections, bright gold

AROMA:

Intense aroma, complex nasal route. Primary aromas tropical fruit, lychees, papaya, iodized tips, mineral, saline. Enveloping, notes of its 3 months appear on fine lees, quince, grape skin.

TASTE:

Tasty, structured, unctuous, with a dry finish the sensation of fruit such as apricot, pineapple, vineyard peach is maintained with great weight. Long and persistent.

MATCHING
Fish such as grilled wild red tuna from Almadraba, grilled oysters, scallops with mushrooms, a Menorcan stew of lobster. And of course all the local Atlantic gastronomy, seafood and shellfish from the Rias Baixas, the famous Galician seafood. Service temperature from 10º to 11º C.
WHO CAN CONTRACT
Pazo Baión is a unique farm located in the heart of the Salnés valley. This distinguished property whose origins date back to the 15th century has one of the most spectacular vineyards on the world wine scene. The walls of Pazo Baión keep behind them the history of the most important noble families in Galicia. Founded in the 15th century by the Sarmiento, Pazo Baión would host some of the most outstanding lineages such as the Figueroa, the Camba and the Soutomaior. Among its centuries of history, there is also talk of Galician emigration at the hands of Don Adolfo Fojo, a wealthy emigrant returned from Argentina, who bought the property and carried out the largest reform of the old pazo, giving it the architectural structure that at the moment it owns with the two towers of Victorian court. It would also send the construction of a dairy and a winery. The last heirs of Don Adolfo Fojo sold the property in the 70s, at which time the first technical plantation of Albariño de Rías Baixas was carried out. This vineyard then became a reference for professionals in the sector. Finally, and after going through different owners, on July 16, 2008, Pazo Baión was acquired by Adega Condes de Albarei. In addition, Condes de Albarei undertakes an architectural and landscaping reform on the estate under the baton of the Galician architect César Portela, National Architecture Prize, thanks to which this jewel of artistic and cultural heritage relives its golden age. Elaboration: Vineyard: Stuck in the sea, vines over 25 years old. Driving system in vineyard. Type of acidic, sandy and granitic soil. Harvest: Extensive maturity control seeking extreme maturity. Manual collection in approved plastic boxes of 20 kg. to maintain the quality of the grape. Selection of the best bunches both in the cone vineyard in the winery. Cold film maceration. Fermentation: Flower musts obtained after gently pressing the grapes. Time of 10 to 15 days approx. The temperature is from 15º to 16º C.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
