Colour: Clean, clear and bright. Old gold color with flashes of onion skin. Fine and persistent bubble. Very nice to see.
Aroma: Entry into the nose with well-balanced subtlety and complexity. Explosion of aromas where the floral touches of rose and violet petals dance together with the notes of the fruit, where wild strawberries, blueberries and currants come out strongly, harmonizing with the citric freshness of orange, herbaceous notes of fennel and fresh grass. The aging is perceived with creamy notes.
Taste: Very fresh entry. Fully integrated and crisp carbonic that melts with sustained acidity. A mineral note closes the set. Fresh, long and persistent.
All kinds of appetizers, very nice with spicy food, oriental, thai, caribbean. Also for Mediterranean cuisine, it is a great ally of the best raw materials.
To enjoy this wine to the full, we suggest serving it between 8ºC and 10ºC.

Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply herbicides or chemical pesticides, we use natural resources with the main objective of maintaining the balance of the environment and we maintain spontaneous vegetal cover to obtain fluffy soil. Through biodynamics, a step beyond ecology, we live our vineyards and seek to increase their biodiversity levels: we apply infusions and decoctions of plants to avoid pests, and we make our own preparations and our own animal compound and vegetables from our medicinal vegetable garden and from our cows, sheep and horses farm
After an intense search for optimum maturity, the grapes are manually harvested in 20 kg boxes. The grapes go to the selection table and then gravity press entry. They are pressed whole, obtaining 50% extraction and meticulously separating the fractions. The must is fermented in 600 and 300 liter French oak barrels of various uses at a controlled temperature in a cold room at 14ºC. You get a fresh, elegant base wine with a strong skeleton. One of the slogans from the outset is to achieve harmony between the aromatic expressiveness of the varietal, maintaining its characteristic tonality and at all times avoiding an excessive supply of tannins. 100% handmade process.
