TASTING NOTE
Colour

Intense cherry red, bright and good layer.

AROMA:

The nose highlights notes of red fruit ( cherry and raspberry ), with a touch of sweet flower, aniseed and spicy.

TASTE:

In the mouth it is delicious and elegant, with a round and very fine tannin, a good acidity and a very refreshing mouthfeel, where the notes of fresh red fruit and spices return.

MATCHING
Good harmony with white meats, pastas and risottos. Try it with a variety of cold canapés or a traditional collection cake.
WHO CAN CONTRACT
In Vallbona de les Monges the history is marked by the presence of the Cistercian monastery. The Cistercian order was founded in Burgundy and was dedicated to combining spiritual activity with development in the field of agriculture and the organization of the territory. Vallbona is a place of ridges and small valleys where the erosive action of water is intuited, which has shaped the landscape. In the Olivera Cooperativa, vineyards and olive groves are cultivated and wines and oils are made, trying to express where they come from, an origin: a land and a people who interpret it from behind. It is a social integration cooperative, which incorporates people with difficulties who actively participate in the whole process. Work is a vital and emotional experience. This adventure began in 1974 in Vallbona de les Monges, in inland Catalonia. A wine that comes from stubborn vintages, with stubborn illusions like the hands that work them. Stubborn as the vines that resist in the dry lands. Stubborn as the illusion that moves to make a project viable. Elaboration: Harvested by hand and in small boxes of 10-12 kilos, the grapes, if necessary, go through a selection table to remove the raisins and rot. The grape varieties ferment mainly in pigeage tanks with periodic subsidence of the skins which, at the end of the fermentation, combine with some open upturning. They make the varieties separately in tanks that are worked manually and at a controlled temperature in order to obtain gentle extractions. It is during the blending process that the proportions of each of the varieties that will make up the Tossudes are decided. Varieties: Monastrell 30%, Cabernet Sauvignon 30%, Grenache 15%, Trepat 15%, Tempranillo 10%.

Este Vino fue simplesmente una gran sorpresa y me encanta beberlo siempre que puedo: Delicado, un poco frutado y con una saida muy suave.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
