INFORMATION OF INTEREST Pau Priorat
Colour: Intense ruby color.
Aroma: Powerful and complex aroma with notes of black and red fruits, underwood and mediterranean herbs, reduction fine notes and a delicate sensation of toasteds.
Taste: Gourmand and intense in the mouth, having a mature tanin, mineral expresion and cacao with a long peristent end
Wine for drinking and/or saving as it will have a good evolution during the next 7 years (till 2022)
Fermentation at 26ºC-28ºC.
Maceration for 28 days.
Grown in french oak from Allier, new and 2n year for 16 months
2008 waas a good year for the old vines that we also consider and call wise. The humidity from spring and first part of summer did not affect these vines with low load of fruit nor vegetation. There was a promedium porduction of 280gr per vine for grenache and carignan and 610gr for the cabernet,giving an excepcional quality of the grapes.
