TASTING NOTE
Colour

Clean, clear and bright. Garnet color with violet reflections. Medium / high layer intensity. Very nice to look at.

AROMA:

The nose represents the highest essence of Galician wines. The presence of ripe fruit, where cherries, strawberries and raspberries are expressed manage to blend into a perfect symbiosis with the most herbaceous and toasty aromas of the same aging.

TASTE:

Fresh and silky on the palate, where it harmonizes with a very well-marked acidity, velvety tannins and a tremendously subtle and integrated wood, a set that gives it a very characteristic elegance on the palate. Pleasant, warm and persistent finish.

MATCHING
We will accompany it with feather hunting dishes, such as a stewed quail and a roasted rabbit. Perfect with cured cheeses, such as perhaps a manchego, tetilla and idiazabal are ideal choices. And of course, a good dried mushroom rice with duck breast.
WHO CAN CONTRACT
The Finca Meixemán de Bodega Guímaro is a red aged in used French oak barrels that combines the character of the Mencía grape with that of the indigenous castes, such as caiño, sousón or brancellao. The vines of more than 70 years with which this exceptional wine is made take root in the granite and slate soils of the Ribeira Sacra.

Along with respect for the traditional castes of the Ribeira Sacra, in Guímaro they have opted to return to traditional elaborations, such as fermentation with a scratch or the treading of the grapes. These operations, which require a lot of labor and little mechanization in the cellar, give particular tasting notes that are surprising for young people and remind us of the wines of yesteryear for the elderly.
