TASTING NOTE
Colour
Clean, clear and bright. Cherry color with garnet reflections where it has a medium layer intensity. Very nice to look at.
AROMA:
Intense and very attractive nose where it reveals with a unique elegance the aromas of red fruit, spicy and toasted aromas from the same aging.
TASTE:
Full-bodied and very tasty mid palate, fresh and with a long persistence, which allows us to confirm that we are facing a good interpretation of modern wine.
WHO CAN CONTRACT
Víctor de La Serna, or Fernando Point, journalist and wine chronicler in widely distributed newspapers such as El Mundo, is one of the most reputable and weighty wine critics in our country. Finca Sandoval is his personal project. Begun in 1998, it was born in the almost ten hectares of syrah that they have in the heart of Manchuela, in the province of Cuenca. They were planted according to an idea formed over 30 years of continuous knowledge of the land.
The winery has a production capacity of 70,000 liters, 200 oak barrels and an air conditioning system for the aging warehouse and the bottle storage area. The harvest is done by hand in small boxes of 12 to 15 kilos.
The four plots, identified with four different types of terroirs, are vinified separately. It is fermented in small open tanks of 5,000 liters and they sink the hat very often. Previously, they make long cold macerations and then the wine undergoes all malolactic fermentation in barrels. They do not filter or clarify the wines before bottling.
