INFORMATION OF INTEREST El Nogal 2015
Colour: Clean and bright It presents an intense purple color with garnet reflections. Medium layer with abundant tear intensity. Very nice to look at.
Aroma: Spectacular nose entrance where the aromas of wild flowers take over with all their fullness, together with a base of nuts that are balanced with a touch of smoked, coffee and background and very subtly licorice notes.
Taste: In the mouth, it is presented with a lot of complexity and intensity, where it is shown with a spectacular elegance and fleshiness. With a long and very persistent finish, we can say that we are in front of an immensely elegant, sensual and complex wine.
The winery is located hugging several hundred-year-old walnut trees, forming a cloister in which the vineyard is never lost sight of.
All the functions are developed around this great patio; processing, aging, bottling and shipping warehouse.
Complete the Social Building, conceived as an element of union between the different parts, it appears without making noise a landscape and pure figure that frames the landscape proposes a fluid and friendly route. The grapes rest in a cold chamber for 24 hours before processing.
In order to obtain the maximum aromatic intensity, maceration is carried out below 12º C for six days. Later, it is sown with our selected autochthonous yeast and the fermentation in oak fudres is controlled. It is sobre-encuba at 26º C (28 days). The malolactic fermentation develops slowly, tempering the malolactic room at 22ºC without the addition of bacteria for 32 days in French oak barrels.
Afterwards, it rests for 18 months in selected French oak barrels.
