INFORMATION OF INTEREST Espelt Garnatxa Airam

TASTING NOTE

Colour: Clean and bright. Ocher orange with golden reflections fused with copper color. With a slow and dense tear that tells us that it is a rich wine with sugars.


Aroma: Entering a captivating nose, it shows abysmal complexity, where we recommend a second and third coup to enjoy it with all its virtues. The aromas of vanilla, cinnamon and nuts are presented with all its essence, it is perceived prunes, raisins and orellanes. The memories of its long solera appear, a breeding in oak barrels. It is palpated that the coupage par excellence of this great Grenache can be defined in two words: Temps i Celler.



Taste: Input in the mouth, where a conductive thread transports us from the olfactory memories present to the gustatory. Sweetness marked and melancholy over time, it is a wine that speaks for itself, and expresses wisdom and elegance. The smoked honey is interwoven with burned sugar. The passage through the mouth is oily, silky and extraordinary.

MATCHING

Ideal with flaky Cadaqués stoppers (loaf of bread). A select pastry, pasta with nuts: bisbalenc, angel hair and nuts. A variant of contrast would be a hint of cheeses, including blue with quince.

ADDITIONAL INFORMATION

Vineyards belonging to the DO Empordà. Gravelly soil on top of granite for black Grenache, slate floor for gray Grenache. Old vines over 60 years old planted in a glass.

Cold film maceration for 48 hours. Bleeding is allowed to ferment with natural yeasts until 90 grams of sugar remain. Next, alcohol is added up to 15% vol. The wine undergoes oxidative aging for approximately one year in used oak barrels, and then the equivalent of 20% of its capacity is added to each solera barrel. The wine develops its characteristics in this aging system. The wine is bottled without clarifying or filtering. This solera is from 1998.

We recommend serving it at 6-8º.
