AROMA:

This brandy is an expression of the Mediterranean warmth, of a dazzling sun, in a high place full of carob trees with fascinating shapes. It is rustic purity, distilled rurality. Discovery walking among four solitary trees, beautiful, adapted to the climate and productive, perched on the edge of vineyards or a field of these intense green trees and with their fruit pods hanging from their branches, concentrating sweets. The toffee and ripe fruit emerge to confirm the exuberance of the treasure that this tree houses

Beyond vineyards, cereals and olive trees, carob is a characteristic crop of the sunniest and most marine Mediterranean arc. Its fruit, a sweet pod is the soloist of this brandy. In the hottest and least rainy seasons, the robust and imposing appearance of this tree stands out with its brilliant green, in contrast to the ocher of the dry land. The dark carobs hang from the branches like pendants, ripening throughout the summer, to accumulate valuable sugars for transformation into aguardiente.
In the quest to get the best out of each ingredient, carob represents an exceptional challenge and opportunity. Located in extreme minimalism, we propose a transmutation of the carob: from a dry, austere and humble fruit to a brandy
