AROMA:

Of remarkable intensity, complex, aromatically (yellow plum, loquat, candied pineapple, aromatic herbs, chamomile flower), are the olfactory records that appear on the nose. Very interesting and complex.

TASTE:

Pleasant entry into the mouth, good journey and long finish. It is a persistent wine, well structured, tasty and with character, a full-bodied wine with many nuances, a taste profile of ripe white fruits, baked yellow apple, heather honey. Interesting subtle mineral sensation.

Ideal with seafood and fish from the coast, Mediterranean rice with black rice, a magnificent fideua with cuttlefish and prawns from Roses or simply magnificent crayfish au gratin baked with a soft muslin of young garlic.

Service temperature from 10 to 12º C.

Millennial property located in the Vall de Sant Romà, in the municipality of La Selva de Mar (Alt Empordà). In 974, Count Gaufred d 'Empúries donated an extensive territory to the monastery of Sant Pere de Rodes, except for the valley of Sant Romà, as it was an extremely beautiful place, fertile and with abundant hunting.

In 1989 the Soto-Dalmau family acquired the Mas Estela and the 50 ha. of earth that surrounds it. After a long restoration work, Mas Estela is reviving. 16 ha are replanted. of vineyards with black and red Grenache, Syrah, Samson and Muscat of Alexandria. Organic farming has been chosen since the beginning of 1989 and then, in 1999, in biodynamics.
Mas Estela, located in the extreme northeast of Catalonia, in the Cap de Creus Natural Park, is attached to the Sierra de Rodes, 3 km. of the sea. The climate is dominated by the north wind, the main ally of biodynamics due to its healthy influence.

Elaboration:
The harvest is done manually in boxes of 18 kg. The choice is careful on the same strain. The harvest is its own. The soil is from slates to mountains on dry stone terraces at 380 m. of height.
Varieties: Red Grenache 90%, Muscat d'Alexandria 10%.
100% shelled and squeezed, cold film maceration for 12 hours. Fermentation in stainless steel vats. Temperature control is 16º-17º.
The wine has the ecological certificate by the CCPAE of Catalonia, biodynamic principles are used.
